Nutrition Advisor Offers Healthier Holiday Alternatives

vincent 300CENTRAL CITY, Ky. (12/18/13) — As the holidays approach, the last thing on many people’s minds is taking the time and trouble to eat healthy. But Donna Vincent of Bremen has found the secret to preparing delicious holiday meals that don’t pack on those post-holiday pounds.

Vincent is semi-retired but still enjoys working two days a week at the Muhlenberg Board of Education and two days a week as a nutrition advisor at Cornucopia 2 Health Food Store in Central City.

Like many Americans, Vincent says she suffered ill effects from obesity. When she reached 300 pounds she decided it was time to see her family doctor, she said.

“I began having a lot of pain in my legs, and I just assumed it was related to my weight and age. Then my hair began falling out profusely, so I decided to go to the doctor. He performed a muscle damage test and the results were alarming. A normal reading should be 40 and mine was 245.” Vincent said.

That’s when Vincent began following her doctor’s orders, as well as seeking natural alternatives to the conventional American diet of excessive yeast, processed sugar and toxic additives.

“You have to try to keep an alkaline balance, and most of us have high acidic levels in our bodies because of the nature of the Western diet.” Vincent said.

In layman’s terms, eliminating acidic foods meant totally restructuring her diet.

“Under a doctor’s supervision, I began to eliminate yeast, flour, many dairy products, sugar, white potatoes and rice, along with wheat, fruit juice, artificial sweeteners, vinegar, processed foods and alcohol. This left me with the problem of what could I eat?” Vincent said.

“Surprisingly it’s really not that hard to eat healthy and enjoy your meals. Instead of processed sugar I now use natural honey or real maple syrup. Cutting back or eliminating certain foods in a controlled manner allowed me to drop the weight off fast without any health risks,” she said.

So what does her Christmas feast include?

“I buy an organic turkey. You can find them online, and many area Amish farms have them in surrounding counties. Instead of regular dressing, I stuff the turkey with rosemary and other natural herbs, along with pink Himalayan sea salt. Then I rub the turkey with coconut oil, which helps it brown nicely and holds the juices in. I also cut an avocado up and put it in the bottom of the pot. Avocado is a very good substitute for butter. I don’t add any water to it at all. I just put it in the roaster and let it cook slowly for several hours.” Vincent said.

But is there any substitute for dressing? Vincent says she has the answer.

“I use a seed called quinoa. It’s a good rice/bread substitute and you can find it at Cornucopia 2 and at Walmart,” said Vincent. These seeds are tiny balls that do require rinsing to remove the bitterness. I boil them with chicken broth, then let them sit for about five minutes. Next I just chop up celery and add some sage, and my family loves it. You really can’t tell that much difference from regular dressing. My other big secret is that I substitute coconut oil for vegetable oil.”
