SKYCTC Alumni of the Month - Jason Lindsey Works with Center for Courageous Kids in Scottsville Kentucky

skctc lindseyBOWLING GREEN, Ky. (11/25/13) – Jason Lindsey, our SKYCTC Alumni for Nov., chose a unique but rewarding path in his desire to work with children. Lindsey graduated from SKYCTC in May of 2012 and is currently the Executive Chef and Dining Hall Manager at the Center for Courageous Kids located in Scottsville, Kentucky.

“I came from a family of great cooks, especially my grandmother, who allowed me to be creative in the kitchen at a very young age”, said Lindsey.

Lindsey actually began his education at Sullivan in Louisville however, as he put it “life happened and it took me 14 years to finish a 2 year degree”. But according to Lindsey, that time gave him the opportunities to gain real life experience and the opportunity to explore other options. In the end, he returned to Culinary Arts and was excited to discover a program that has an “Exemplary Status” from the American Culinary Federation Education Foundation so close to his home community.

“I am truly blessed”, said Lindsey, “the Culinary Arts program at SKYCTC is one of the best that can be found anywhere. Chef Riggs and Mrs. Hunt challenge students to be the best they can be and to work hard for the student’s personal goals”.

Lindsey is currently fulfilling exciting challenges at the Center for Courageous Kids (CCK). CCK is a state of the art medical facility located outside of Scottsville, Kentucky, that provides a cost-free, safe, and fun camping experience for seriously ill and disabled children and their families. In addition to offering summer camps, CCK also offers family retreats most weekends of the year.

According to Lindsey, that while most weekends call for special attention to dietary needs, the biggest challenge is coming up – Severe Food Allergies. Not only will Lindsey prepare meals that have eliminated dairy, wheat, tree nuts, peanuts, shellfish, fish, eggs, and soy but he will also need to remove corn (in any form), pork and oranges.

“We will also be doing a deep clean of the kitchen and dining hall because we believe in doing everything we can for our families,”
