OWENSBORO, Ky. (9/23/13) – Global Spectrum, the management company of the Owensboro Convention Center, has announced that Eric Copeland is the newest member to join its team as the Director of Food & Beverage.
Copeland has over 12 years of culinary experience. His successful culinary career started in Las Vegas where he was able to study under some of the great chefs in the Las Vegas region. In 2002, Copeland returned to his hometown of Pueblo, Colo., where he assumed many positions in the culinary industry, including becoming a chef at several local gourmet restaurants.
His professional culinary skills blossomed during his tenure at the Pueblo Country Club, where he worked his way from Head Line Chef, to Sous Chef, and to ultimately becoming the Head Chef in 2006.
In 2008, he became the Executive Chef at the Pueblo Convention Center. After several successful years as Executive Chef, he was promoted to Director of Food and Beverage and retained the title of Executive Chef, giving him an important dual role at the Pueblo Convention Center.
During his time in Pueblo, Copeland not only mastered his culinary skills and the complexities of managing food for events, he also acted as an Intermediate Cookery Instructor at Pueblo Community College.

Copeland enjoys many outdoor activities, cooking delicious meals for his friends and family, and is a big Boston Red Sox fan.
